Potato salad with bacon is my signature dish. How many times have I cooked – guests always respond in it in the style of “ohh, this is the best potato salad that I have ever tried.” Shall we prepare?
Rinse the potatoes thoroughly. If the potatoes are young, then you do not need to peel them. If it’s old, then, of course, you need to peel it. I had a young one so I didn’t clean.
In a large saucepan, bring the salted water to a boil. Put the prepared potatoes in boiling water.
Cook until the potatoes are fully cooked. The cooking time depends on the size of the tubers, on average about 40 minutes.
Meanwhile, finely chop and mix eggs, bacon, olives, celery, pickled cucumbers, green onions and dill in a salad bowl.
Cool the boiled potatoes and cut into large cubes (do not chop finely, otherwise the salad will turn into porridge). If the potatoes were young and well washed, then the peel need not be peeled off.
As you might have guessed, add the sliced potatoes to the salad.
Salt and pepper to taste. Season with mayonnaise, mix well. We send to the refrigerator to brew.
