Potato Salad with Fried Sausages Ingredients

For the sauce:

  • 125 ml vegetable broth
  • 5 tablespoons red wine vinegar
  • 1 tablespoon hot mustard
  • 2 slices of garlic (cut 2 thin slices from a clove of garlic)
  • salt
  • sugar
  • ground red cayenne pepper
  • 8 tablespoons mild olive oil (other vegetable oil will work as well)

Potato Salad with Fried Sausages

For the salad:

  • 600 grams of potatoes
  • salt
  • 1 teaspoon of cumin seeds
  • 3-4 green onions with feathers
  • 150 grams of green beans
  • 2 Nuremberg sausages (other similar varieties will work too)
  • 3 tablespoon. tablespoons of olive oil
  • ground black pepper
  • marjoram
  • ground cumin

Potato Salad with Fried Sausages Instructions

  1. Making a sauce for a potato salad: pour vinegar, broth into a tall large glass from a mixer, put garlic and mustard. Beat with a hand mixer (blender). Add salt, sugar, cayenne pepper to taste (just a pinch) and olive oil, stir.
  2. Boil the potatoes in their skins. Put salt and caraway seeds in the water. Cool the finished potatoes slightly with cold water, peel them, cut into thin slices.
  3. Boil the green beans in salted water (about 5-8 minutes, depending on the age of the beans). Rinse the finished beans with cold water and dry
  4. Heat 1-2 tablespoons of vegetable oil on a frying pan and fry the potatoes over medium heat on both sides (until golden brown).
  5. Add chopped onion and fry with potatoes for a couple of minutes.

  6. Then add the beans. Pepper, salt, add a little marjoram, caraway seeds and put in a deep salad bowl.
  7. Fry the chopped sausages in the remaining vegetable oil, put them on a paper kitchen napkin for half a minute and cool slightly. Then add the sausages to the salad and mix everything with the sauce. The potato salad is ready.
