Instructions

  1. Peel the prickly pears. This works best if you put the fruit in cold water for a while and then take it out. Now you can peel them without any problems. Halve the figs and bring to the boil with the white wine and simmer for about 10 minutes. Strain the mixture through a sieve, as there are a lot of seeds. I then had 1 kg left. Put the mixture back in a saucepan, add the vanilla sugar and continue working according to the instructions from the jam sugar package. Please do a gelling test and possibly let it cook a little longer.
  2. Fill hot into twist-off jars and close immediately.
