Ingredients

  • 1 packet puff pastry, vegan
  • 200 g tomato (s)
  • 2 bell pepper (s)
  • 1 tablespoon thyme

For the sauce:

  • 4 tablespoon tomato paste
  • 4 tablespoon water
  • 2 tablespoon olive oil
  • 1 teaspoon raw cane sugar
  • 3 clove (s) garlic, chopped

Instructions

  1. Preheat the oven to 230 ° C and let the puff pastry thaw.
  2. Cut tomatoes into slices, peppers into strips and spread both out on a baking sheet. Drizzle with olive oil and sprinkle with a little salt, pepper and thyme. Put in the oven and simmer for 15 minutes. Remove the tray and then switch the oven down to 200 ° C.
  3. Roll out the puff pastry on a second baking sheet. For the sauce, stir together tomato paste, water, olive oil, garlic, sugar and a little pepper. Brush the puff pastry with the sauce. Top with the braised tomato slices and the paprika and bake in the oven for 25-30 minutes on the middle rack.
