Puff Salad with Sardines, Carrots, Eggs and Onions

A jar of sardines, the simplest products, very little time – and a very tasty and satisfying salad is ready to decorate your table! All the ingredients of the salad combine very well. Roasted carrots and pickled red onions add interesting flavor notes. Try making a salad with sardines, carrots, eggs, and onions – it’s simple and delicious!

Ingredients

  • Canned sardines in oil – 1 can (240 g)
  • Carrots – 250 g
  • Red onion – 100 g
  • Eggs – 3 pcs.
  • Mayonnaise – 140 g
  • Vegetable oil – 30 ml (2 tablespoons)
  • Salt to taste
  • Ground black pepper – to taste
  • Fresh parsley for garnish – to taste

For pickling onions:

  • Vinegar 9% – 30 ml (2 tablespoons)
  • Water (hot) – 80 ml

Directions

  1. Boil the eggs hard-boiled (8-10 minutes after boiling), then cool in cold water.
  2. Peel and cut the red onion into thin half-rings.
  3. Put the onion in a bowl, add the vinegar.
  4. Then pour 80 ml of hot water. Leave the onion to marinate for 15-20 minutes. After that, we drain the liquid.
  5. Peel the carrots, wash and rub with thin short strips on a Korean carrot grater.
  6. Heat the vegetable oil in a frying pan and sauté the carrots over the heat for less than medium 7-10 minutes, until soft. Transfer the carrots to a plate and leave to cool.
  7. We peel the eggs. Cut two eggs into cubes, and rub one egg on a fine or medium grater and leave to decorate the salad.
  8. Knead the sardines with a fork.
  9. Place the culinary ring on the plate. I have a ring with a diameter of 14 cm. Put the diced eggs in the first layer.
  10. Put a mayonnaise mesh on the eggs, then salt and sprinkle with black pepper.
  11. Then layout a layer of carrots.
  12. Put a mayonnaise mesh on the carrots and spread the pickled onions. A few half rings of red onion can be left to decorate the salad.
  13. Put a layer of sardines on the onion.
  14. Apply a mayonnaise mesh on a layer of sardines.
  15. Then sprinkle the salad with grated eggs.
  16. Carefully remove the culinary ring. Top the salad, if desired, decorate with the remaining red onions and chopped parsley.
  17. Puff salad with sardines, carrots, eggs, and onions is ready.
