Last weekend I decided to have a fasting day, so I had to make a pumpkin and apple casserole for breakfast. I didn’t want an ordinary casserole, so I decided to cook it with something unusual. I had cheese and walnuts in the fridge, and when I saw them, I already knew what I would use to cook the apple and pumpkin casserole.

Pumpkin Casserole with Cheese and Nuts Ingredients

  • Pumpkin – 500 grams
  • Apples – 2 pcs.
  • Eggs – 2 pcs.
  • Oatmeal – 50 grams
  • Walnuts – 100 grams
  • Hard cheese – 100 grams
  • Salt – a pinch
  • Sugar to taste
  • Butter – for lubricating the mold
  • Orange (optional) – for decoration

  1. Wash the pumpkin, peel, and cut. Put it in a saucepan, cover with water, salt and cook on the stove. Cook for about 20 minutes, until tender.
  2. Drain and crush the pumpkin with a crush until smooth. Spoon the pumpkin into a deep bowl, add the oatmeal to it and stir.

  3. Cut the cheese into small cubes or grate and add it to the dough. Wash, peel, core, grate the apples, and add to the pumpkin. Beat the eggs into the dough.

  4. Mix all ingredients thoroughly and let stand for 10 minutes to swell the oatmeal.
  5. Then take walnuts, grind, or break them. I use a kitchen hammer for this. Add the nuts to the dough. Grease the mold with butter and place the pieces of butter on the bottom.
  6. Pour the dough into a prepared baking dish, place in an oven preheated to 180 degrees. Bake the pumpkin casserole for about 40 minutes.
  7. You can garnish the finished pumpkin casserole with, for example, orange slices.
