Pumpkin Gnocchi Ingredients

  • Pumpkin – 700 Grams
  • Eggs – 2 Pieces
  • Flour – 550 Grams
  • Cheese – 100-150 Grams
  • Butter – 2 tbsp
  • Olive oil – 1-2 tbsp
  • Thyme – To taste
  • Salt, pepper, spices – To taste

Pumpkin Gnocchi Instructions

  1. Let’s start by cutting the pumpkin. We wash the vegetable and cut into 2 parts. Pick out the seeds with pulp with a spoon. We leave the solid part. Then, remove the peel from the pumpkin.
  2. Cut the cut pumpkin into small pieces. We put it in a saucepan and fill it with a little water so that the pumpkin is not boiled, but rather stewed. Grind the finished soft pumpkin through a sieve until puree.
  3. Pour olive oil into the hot puree. Salt, pepper. Three grated cheese, 100 grams. Put in the pumpkin. We mix everything. Break a couple of eggs into chilled puree. Stir. Add flour and knead the dough.
  4. Leave the dough to rest for 10 minutes. Then divide it into pieces to roll the sausages. The same principle as with lazy dumplings. Cut the sausages into small pieces. Boil a pot of water.

  5. Throw gnocchi into boiling water. Stir. When the gnocchi float, turn down the heat. Cook for another minute or two.
  6. We take out the hot gnocchi with a slotted spoon. Sprinkle them with grated cheese, add butter. Add thyme leaves for spice. Serve hot.
