Pumpkin Muffins

Delicious, moderately sweet, sunny pumpkin muffins with an unobtrusive pumpkin aroma – a wonderful autumn dessert.

Ingredients

  • Flour – 230 g
  • Pumpkin – 200 g
  • Vegetable oil – 120 ml
  • Egg – 3 pcs.
  • Sugar – 200 g
  • Semolina – 2 tbsp
  • Baking powder – 10 g

Directions

  1. To begin with, prepare the pumpkin – cut into small pieces and, pouring a little water, simmer until soft (about 15 minutes). (You can steam it.)
  2. Next, make mashed potatoes from the pumpkin in any convenient way (for example, using a blender) and add vegetable oil to it.
  3. In a separate container, mix the remaining dry ingredients (flour, baking powder and semolina).
  4. Beat eggs with sugar, add pumpkin puree to them.
  5. Mix dry and liquid ingredients. The pumpkin muffin dough has a pancake-like consistency.
  6. We distribute the dough into tins and bake the pumpkin muffins for about 35 minutes at 180 degrees.
  7. Serve pumpkin muffins with milk or tea.
