- To begin with, prepare the pumpkin – cut into small pieces and, pouring a little water, simmer until soft (about 15 minutes). (You can steam it.)
- Next, make mashed potatoes from the pumpkin in any convenient way (for example, using a blender) and add vegetable oil to it.
- In a separate container, mix the remaining dry ingredients (flour, baking powder and semolina).
- Beat eggs with sugar, add pumpkin puree to them.
- Mix dry and liquid ingredients. The pumpkin muffin dough has a pancake-like consistency.
- We distribute the dough into tins and bake the pumpkin muffins for about 35 minutes at 180 degrees.
- Serve pumpkin muffins with milk or tea.
