Pumpkin Zrazy with Minced Meat

A healthy and tasty dish for pumpkin lovers. Pumpkin zrazy turns out to be slightly sweet, inside there is a lot of minced meat, and on top, there is a very appetizing crust. Pumpkin zrazy can be prepared for dinner and served hot. If the zrazy remain, then on the second day they are just as good cold.

Ingredients

  • Pumpkin (peeled) – 500 g
  • Minced meat (mixed) – 300 g
  • Semolina – 100 g
  • Egg – 1 pc.
  • Milk – 150 ml
  • Bulb onions – 1 pc.
  • Bread crumbs – 100 g
  • or white bread – 100 g
  • Fresh parsley – 20 g
  • Vegetable oil (for frying) – 50 ml

It is better to take a pumpkin with a dense and tender pulp.

Directions

  1. We wash the pumpkin, peel, and remove the seeds. We rub the pumpkin on a fine grater. Heat some oil in a frying pan. We spread the pumpkin and simmer until tender – about 5-10 minutes (depending on the type of pumpkin).
  2. Pour milk into a pan with pumpkin, bring to a boil.
  3. Then, constantly stirring the mass, pour semolina in a thin stream.
  4. Add salt to taste. Cook until the semolina is ready – about 5 minutes. Remove the pumpkin mass from the heat and let it cool.
  5. Cooking the filling. Peel and wash the onions and chop finely. Wash the parsley, dry it slightly and chop finely with a knife.
  6. Preheat a frying pan with vegetable oil and fry the onion until golden brown – about 3 minutes. Add the minced meat to the onion in the pan and fry until tender – about 10-15 minutes. In the end, add salt and pepper to taste. We send the parsley to the pan, stir and turn off the heat.
  7. In a bowl, lightly beat the egg with a whisk. Pour the egg into the cooled pumpkin mass and mix.
  8. We divide the mass into about 8 equal parts, roll into balls. Flatten the balls into flat cakes. Put the minced meat in the center of each flat cake with a tablespoon.
  9. Gently join the edges of the cake and form the zrazy with the meat filling inside.
  10. It is convenient to form zrazy right in the palm of your hand. We dip our hands in water or grease with vegetable oil. Flatten the pumpkin ball into a tortilla right in the handful, layout the minced meat, and connect the edges of the tortilla on top. Also in our hands, we form blanks in the form of cutlets.
  11. Then we bread the zrazy in breadcrumbs. (You can make bread crumbs yourself at home. You need to dry the bread until golden in the microwave or toaster, cool, and grate. In this case, you know the quality of the original product – bread – and you can be sure of the taste of the finished dish.)
  12. We heat vegetable oil in a frying pan and put the zrazy there. Fry zrazy over low heat until golden brown – for 2-3 minutes.
  13. Gently turn the zrazy over with a spatula and fry on the back, also until golden, – about 2 minutes.
  14. We spread the finished zrazy on a paper towel to get rid of excess fat.
  15. Pumpkin zrazy with minced meat is ready. From this number of products, I got 8 times. Enjoy your meal!
