Quiche is an open sandwich cake with a filling that came to us from French cuisine. The main component of any quiche, in addition to shortcrust pastry, is egg filling with the addition of milk or cream. As for the filling itself, it can be absolutely anything. This recipe focuses on the vegetable gourd with pumpkin and tomatoes. An unusual, but very tasty combination of vegetables, amazing aroma, and juiciness of the quiche will not leave anyone indifferent.
Ingredients
pumpkin – 250g
tomatoes – 6 pcs. (small)
egg – 3 pcs.
onion – 1 pc.
milk – 150 ml
cold water – 75 ml
flour – 260g
butter – 130g
sour cream – 70g
lemon (juice) – 1 tablespoon.
cumin – 1 teaspoon
salt to taste
ground black pepper – to taste.
Directions
Pour flour into a bowl and add the cold butter. Grind the butter and flour into crumbs.
Add lemon juice, cold water, and sour cream. Knead the dough. As a result, it should turn out to be very soft. Wrap the dough in foil and refrigerate for 1 hour. Beat eggs, milk, pepper, and salt to taste in a separate bowl.
For the filling, peel the pumpkin of seeds and peel. Cut the pumpkin into small cubes. Also, chop the tomatoes finely. Cut the onion into half rings. Combine all chopped vegetables in a bowl. Add cumin (you can use other favorite spices), pepper, and salt to taste. Mix well.
After 1 hour, remove the dough from the refrigerator. Roll out a circle from the dough and put it in a mold smeared with butter. Spread evenly. Then lay out the pumpkin and tomato filling. Flatten.
Fill with egg filling, trim the edges evenly and fold. Send to a well-heated oven. Bake for 1 hour in an oven preheated to 180C. After the specified time has elapsed, remove the finished quiche with pumpkin and tomatoes from the oven, cut into portions and serve. Bon Appetit!
