Instructions

  1. Preheat the oven to 220 ° C top / bottom heat.
  2. If pizza dough flour is not available, type 405 flour can also be used. These flours have excellent baking properties and very few minerals (less than 0.5%).
  3. Heat the kefir in the microwave to about 35 ° C, mix the rest thoroughly and add the warmed kefir. Mix everything to a homogeneous mass for about 4 - 5 minutes. I use a hand mixer with a dough hook.
  4. Put the dough into a bread pan lined with baking paper with a large spoon. Always wet the spoon under running water. Finally, smooth the surface with the spoon. Let the dough rise for about 30-50 minutes, depending on the ambient temperature.
  5. When the dough has increased by about 1/3, place the bread pan in the preheated oven on the middle rack. If you can, you should also set the oven to add steam or put a bowl of water in it. After about 25 minutes you can see a nice browned surface on the bread. Either reduce the temperature to 150 ° C and bake the bread covered with aluminum foil for another 10 minutes or bake for another 10 minutes at 150 ° C and bottom heat.
  6. When the bread is ready, when you knock on the underside, the tone should sound hollow. If not, put it in the oven again for a few minutes.
