  • Chicken sausages (cut into slices 1 cm thick) – 240 g
  • Canned white beans (drained) – 900 g
  • Canned tomatoes (cut) – 400 g
  • Zucchini (chopped) – 1 pc.
  • Kale (collard greens) (chopped) – 6 cups (approx. 220 g)
  • Olive oil – 1 tbsp
  • Onions (finely chopped) – 0.5 cups
  • Garlic (chopped) – 3 cloves
  • Water – 0.5 cups
  • Salt – 0.25 teaspoon
  • Ground black pepper – 0.25 teaspoon.

Quick Stew with Sausage and Beans Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Put the onion and chopped sausage in a frying pan, fry, stirring occasionally, for about 4 minutes, until the sausage is brown. Place the zucchini and garlic in a skillet and fry for about 2 minutes.
  3. Put collard greens, beans and tomatoes in a frying pan, season with salt and pepper. Bring the mixture to a boil, cover the pan with a lid, reduce the heat and simmer the sausage and beans ragout for about 10 minutes.
  4. Serve the sausage stew immediately.
