Ingredients

  • 700 g sweet potato (s)
  • 2 large tomato (s)
  • 3 spring onion (s)
  • 400 ml coconut milk
  • 1 clove garlic
  • 1 tablespoon tomato paste
  • 3 ½ cm ginger root
  • Paprika powder
  • Curry powder
  • salt and pepper
  • sesame oil
  • Roasted peanuts
  • soy sauce

Instructions

  1. Clean, wash and dice the sweet potatoes and tomatoes. Wash and clean the spring onions and cut into rings.
  2. Heat some sesame oil in a saucepan, sauté the spring onions lightly and press the garlic into the saucepan as well. Then fry the sweet potatoes and tomato paste briefly. Season well with curry powder, paprika powder, pepper and salt. Don`t be too frugal here, the coconut milk takes out some of the flavor.
  3. Add the coconut milk, finely grate the ginger and simmer the sweet potatoes for 15 to 20 minutes.
  4. Add the diced tomatoes 5 minutes before the end of the cooking time. Season the stew with the spices and season with soy sauce to taste. Finely chop the roasted peanuts and pour over the sweet potato stew to serve.
