Ingredients

  • 1 cup quinoa
  • 1 vegetable stock cube
  • 1 slice (s) bread
  • 3 tomato (s)
  • 3 tablespoon olive oil
  • 2 cloves garlic, chopped
  • 1 mozzarella
  • 1 lemon (s), the juice it
  • some basil, fresher
  • some oregano
  • salt and pepper
  • water

Instructions

  1. Put quinoa in a sieve and rinse with hot water so that the bitter substances are washed off. Put the diced vegetables in water and bring to the boil. Add the quinoa and simmer in the broth for about 15 minutes. In the meantime, cut the tomatoes and mozzarella.
  2. Once the quinoa is ready, strain off the remaining water and place the quinoa in a large bowl. Let cool down a bit and then add the mozzarella, tomatoes and herbs. Add olive oil. Then season with salt, pepper, 1 clove of garlic and lemon juice.
  3. Finally, cut the bread into cubes and fry in olive oil with the remaining clove of garlic. Add the still hot bread cubes to the quinoa mixture, mix everything well and serve.
