Ingredients

  • 200 g quinoa
  • 1 bell pepper (s)
  • 1 onion (s), red
  • 1 clove garlic
  • 2 tablespoon tomato paste
  • 1 can tomatoes, chunky
  • 150 ml vegetable stock
  • 1 can tuna
  • Oil for frying
  • salt and pepper
  • cumin
  • Herbs, e.g., basil, parsley etc.

Instructions

  1. Cook quinoa according to the instructions, it can also be a few minutes less.
  2. Chop onions, peppers and garlic into small pieces.
  3. Fry the onions in a little oil, add the paprika and garlic as well as the tomato paste and fry with them. Deglaze with the vegetable stock and add the chopped tomatoes. At the end, mix in the tuna and quinoa and season with salt, pepper and cumin.
  4. Basil or parsley also go well.
