Ingredients

  • 1 head radicchio (large)
  • 2 cans artichoke hearts, natural
  • 9 egg (s), hard-boiled
  • some capers
  • 150 ml balsamic vinegar or apple cider vinegar
  • 300 ml pumpkin seed oil or olive oil
  • 1 small onion (s)
  • salt and pepper

Instructions

  1. Cut the radicchio into fine strips, divide the artichokes into sixths (or only quarter depending on size) and place both in a large bowl.
  2. For the marinade, finely chop an egg, onion and capers. If you don`t like capers, you can also use pickles. Mix vinegar and oil, add salt, pepper and the chopped ingredients. Mix well or shake well in a shaker. Mix the salad with it.
  3. Divide the salad between 4 plates or serving bowls. Cut the remaining 8 eggs into wedges or slices and place 2 eggs each on a salad.
  4. Whole grain rye bread tastes good with it!
