  • Grated hard cheese – 1 cup
  • Chicken broth – 6 cups
  • Brine – 0.75 cups
  • Milk – 0.6667 cups
  • Flour – 2 tablespoon.
  • Paprika – 1 teaspoon.
  • Pepper
  • Fresh dill to serve
  • Sour cream to serve

  1. Cut the pork belly into thin strips and fry it in a pot with a thick bottom in its own fat.
  2. Take out the belly and fry the onions sliced into large cubes in this fat that stood out.
  3. When the onions are fried, add the diced potatoes and mix everything.

  4. Pour the broth. Boil for 20 minutes.
  5. Blend milk and flour until smooth.

  6. Add the resulting mass to the soup and stir.
  7. Grate the cheese on a coarse grater. Add it to the soup with potatoes and stir.

  8. Cut the cucumbers into circles, add them to the soup with cheese.
  9. Pour the brine into the soup and mix. Boil the rassolnik for another 5 minutes. Season it with paprika and black pepper.

  10. When serving the rassolnik, add sour cream, chopped fresh dill, and slices of the roasted belly to your soup bowl.
