Ingredients

  • 3 shallot (s)
  • 2 cloves garlic
  • 1 medium zucchini
  • 1 medium aubergine (s)
  • 2 tomato (s)
  • 1 packet tomato paste
  • 1 can jackfruit
  • 4 mushrooms, brown
  • 0.5 ½ pack cream
  • 0.5 ½ lemon (n)
  • 2 tablespoon balsamic vinegar
  • salt and pepper
  • basil
  • Herbs
  • Curry powder
  • Sambal Oelek

Instructions

  1. Wash all vegetables and cut into pieces of any size. Drain the jackfruit. Fry the onions and garlic in butter or margarine, add the zucchini and deglaze with a little water. Let everything cook for about five minutes. Add the aubergine and then the tomato paste and season to taste.
  2. Then mix in the tomatoes and jackfruit and deglaze with water again if necessary. Let everything simmer for about five minutes. Then add the mushrooms and balsamic vinegar. Simmer again for about five minutes and then add the juice of half a lemon. Turn off the stove and let it steep for about 10 minutes.
  3. Serve hot.
