Ingredients

  • 350 g flour
  • 225 g butter, soft
  • 65 g suar
  • 1 pinch baking powder
  • 1 pinch (s) salt
  • 1 egg (s)
  • 1 packet vanilla sugar
  • 1 lemon (s), including the peel
  • 10 drops bitter almond flavor
  • 150 g jam, red or dark
  • powdered sugar

Instructions

  1. Beat the butter, egg, sugar and vanilla sugar until creamy. Add the almond flavor and lemon zest. Slowly add the flour, baking powder and salt. Knead into a soft dough with your hands and then place in the refrigerator for 30 minutes.
  2. Roll out on a floured surface and cut out approx. 2 mm thick shapes (round). Put 1/2 teaspoon of jam in the middle on half of the cut pieces. We like black currant jam best. But lingonberry or plum jam works fine too.
  3. Cut the other half crosswise in the middle and place on the cookies with jam. Press the edges together with a cake fork or similar.
  4. Place on a baking sheet with parchment paper and bake in the oven for 10 to 12 minutes at 180 ° C. After cooling, dust with powdered sugar.
  5. TIP:
  6. Don`t put too much jam on the cookie. Otherwise it will run out during baking and will not look so nice.
  7. Makes about 40 pieces.
