Ingredients

For the dough:

  • 200 g flour
  • 2 egg (s)
  • salt
  • olive oil

For the filling:

  • 250 g ricotta
  • 1 egg yolk
  • 100 g herbs for Frankfurt reen sauce, finely chopped
  • salt and pepper
  • 1 pinch (s) nutmeg

Instructions

  1. Make a pasta dough from flour, eggs, salt and olive oil. Wrap it in a damp cloth and let it rest for at least 1 hour.
  2. In the meantime, prepare the filling. Simply mix all the ingredients together and season to taste. Frozen herbs can also be used for this recipe.
  3. Roll out the pasta dough thinly with a rolling pin or with the pasta machine. Spread the filling on top and form the ravioli. Let simmer in enough salted water.
  4. We had sugar snap peas tossed in butter.
  5. The recipe is enough as a starter for 8 people.
