Red Borsch with Zucchini

Red borscht with zucchini is a rich and tasty first course, rich in bright, juicy, and aromatic vegetables. The set of products for borscht according to this recipe is quite familiar, but the zucchini in borscht is definitely something new. But, believe me, borscht turns out to be very tasty!

Ingredients

  • Chicken drumsticks – 3 pcs.
  • Zucchini – 300 g
  • Tomatoes – 400 g
  • White cabbage – 350 g
  • Potatoes – 300 g
  • Beets – 150-200 g
  • Carrots – 100 g
  • Onions – 100 g
  • Garlic – 2 cloves
  • Vegetable oil – 30 ml
  • Bay leaf – 2 pcs.
  • Salt to taste

Directions

  1. We prepare products. Also, during the cooking process, we need boiling water.
  2. Wash chicken drumsticks, put in a saucepan, and pour 2-2.5 liters of water. We put on heat, bring to a boil, and remove the foam. Cook chicken broth over low heat for 25-30 minutes. During the cooking process, periodically remove the resulting foam.
  3. Peel and rub the beets on a coarse grater. Peel and dice the potatoes.
  4. We take out ready-made chicken drumsticks from the broth, you can use them for cooking other dishes or remove the meat from the bone and add to each portion of borscht when serving. Strain the broth and return to the pot.
  5. Put beets and potatoes in a saucepan with broth, cook for 10 minutes over medium heat.
  6. Peel the onion, cut into cubes. Peel the carrots and grate them on a coarse grater.
  7. Heat vegetable oil in a frying pan. Fry the onions and carrots over medium heat until soft (7-8 minutes).
  8. Finely chop the cabbage. Cut the zucchini into cubes.
  9. We send cabbage, zucchini, and stewed vegetables to the saucepan. Cook for 5-7 minutes over medium heat.
  10. Pour the tomatoes with boiling water for a couple of minutes, then dip them in cold water. We peel the tomatoes. Rub the peeled tomatoes on a coarse grater. Add chopped tomatoes, bay leaves to the saucepan, and salt to taste.
  11. Peel and squeeze the garlic through a press. Add garlic to borscht, stir and turn off the heating. Let the borscht with zucchini brew under the lid for 5-10 minutes. Zucchini borscht is ready to serve.
