Ingredients

  • 1 small red cabbage, cleaned, cut into strips
  • 2 m. Apples, sour, peeled, diced
  • 1 medium onion (s), diced
  • 2 tablespoon goose lard or lard
  • 3 tablespoon vinegar (preferably apple cider vinegar)
  • 0.25 liter ¼ apple juice
  • 2 clove (s)
  • 1 bay leaf
  • salt and pepper
  • 1 tablespoon sugar

Instructions

  1. Heat the lard in a saucepan and sweat the onion and apple cubes in it. Add the red cabbage and stir in the vinegar, then add the apple juice. Now add the cloves and bay leaf and season with salt, pepper and sugar.
  2. Cover and simmer over a medium heat for approx. 50 minutes, stirring occasionally. Possibly add a little more liquid. Goes very well with roulades or roast pork.
