Ingredients

  • 250 g flour
  • 500 ml buttermilk
  • 0.5 teaspoon ½ baking soda
  • 1 teaspoon Baking powder
  • 50 grams sugar
  • 1 teaspoon vanilla or vanilla sugar
  • 1 pinch (s) salt
  • 3 egg (s), separated
  • Butter or oil for the pan

Instructions

  1. Separate the eggs and beat the egg whites with a pinch of salt until stiff
  2. Beat egg yolks with sugar until frothy.
  3. Mix the flour with baking powder, baking soda and vanilla in a bowl and add to the egg-sugar mixture alternately with the buttermilk or milk. Mix everything briefly, until the flour has dissolved or is well distributed at the end.
  4. Finally, carefully fold in the egg whites. Cover and let rest for about 30 minutes!
  5. Warm some butter or oil in a pan and add a ladle of batter. Bake until golden yellow on medium heat.
  6. When the top layer throws bubbles, turn the pancake and fry again briefly.
  7. Turn out onto a plate and continue to fry as before until the dough is completely used up.
  8. Sugar with cinnamon or applesauce or compote tastes best with it!
  9. If you don`t like it so sweet, add no or only 1 tablespoon of sugar.
  10. Instead of buttermilk, milk can also be used, and those who like it crispy can use mineral water.
  11. The vanilla can be replaced with 5 drops of vanilla flavoring or with vanilla cocoa or simply left out completely, if you don`t like it that much!
