Instructions

  1. Mix the dry ingredients, knead with warm water in the food processor for about 5 - 8 minutes. Pour into a large floured bowl, cover with the lid and either let rise slowly overnight in the refrigerator or in a warm water bath or in a warm place until the dough has doubled.
  2. Let rise again while the oven is preheating to 240 ° C top / bottom heat. If the dough is too soft, knead in rye flakes or oat flakes. Shape into two loaves of bread. It is best to warm the baking sheet on the stove on a low setting. Then place the bread on top, score with a sharp knife and spray with water. Now cover and let rise until the oven is 240 ° C.
  3. Pour half a cup of water on the bottom of the oven and slide the bread into the oven on the lowest rail. Bake for 10 minutes at 240 ° C top / bottom heat, then reduce the temperature to 190 ° C and finish baking in 50 minutes.
  4. The recipe makes about 1200 g bread.

The Boss Kitchen editorial staff oversees content review, fact-checking, and recipe verification across the site. Published articles pass through the editorial team before going live, ensuring ingredient lists, techniques, cooking times, and nutritional claims hold up in a home kitchen. The team coordinates contributions across the site writers, handles reader corrections, and maintains consistency in measurement conventions, safety guidance, and dietary labeling. Posts under this byline typically represent team-reviewed reference material, site announcements, or editorial roundups rather than individual-author features, and they are held to the same sourcing standards as bylined recipe and product coverage.
