Reshti Potatoes with Herring Sauce

Resti potatoes are a Swiss national dish made from potatoes, ground, or cut into strips. Well, herring sauce, which is prepared in a matter of minutes, will help to give this dish a brighter taste and richness.

Ingredients

  • Potatoes – 700 g
  • Hard cheese – 70 g
  • Butter – 50 g
  • Salted herring fillet – 2 pcs.
  • Pickled cucumbers – 2 pcs.
  • Onions – 1/4 pcs.
  • Garlic – 1 tooth
  • Sour cream – 100 g
  • Salt – 1/2 teaspoon
  • Ground black pepper – to taste

Directions

  1. You can boil the potatoes in advance, and then it will take you no more than 10 minutes to prepare dinner.
  2. Peel the potatoes and boil them in salted water until tender. It can be boiled in a peel and then peeled, this will not affect the taste of the finished dish, and there will be more nutrients in the potatoes.
  3. While the potatoes are boiling, prepare the sauce. Finely chop the onion, chop or chop the garlic in a garlic press, and also cut the cucumbers into small cubes. Peel the herring fillet and cut it very finely, like cucumbers.
  4. In a deep bowl, combine the sauce ingredients: onion, garlic, cucumber, and herring. Add sour cream and lightly salt, after tasting it.
  5. The sauce is rich and salty. Inconsistency, it is similar to an Olivier salad. You can add more sour cream, then the herring sauce will be thinner. For the resti potatoes, we need cheese. Grate it on a coarse grater.
  6. Also, grate the cooled boiled potatoes on a coarse grater and mix with the cheese. Salt if necessary. Place small pieces of butter in a non-stick skillet.
  7. Spread a third of the potatoes with cheese on top, press lightly with the back of a spoon. Spread the pieces of butter over the surface.
  8. Put the third of the potatoes with cheese and butter again, and then the last layer of cheese and potatoes. Spread the butter on top. Place the skillet over medium heat for 10-12 minutes.
  9. Then turn the potato layer over. This can be done with a wide plate – cover the skillet with it and turn gently. Then slide the tortilla into the pan, with the toasted side up. Fry on the other side for another 8-10 minutes.
  10. Serve the rösti potatoes on a wide flat plate with chilled herring sauce. You can decorate with green onion feathers, it goes well with the ingredients of the dish.
