Ingredients

  • 1 cup basmati
  • 1 small onion (s)
  • 315 g mushrooms, freshly sliced
  • 1 can corn
  • 1 can kidney beans
  • 1 large carrot
  • 1 glass ajvar, approx. 500 ml
  • salt
  • some Tabasco
  • oil

Instructions

  1. Cook the rice until it is done. Finely dice the onion, peel the carrot and cut into thin slices, drain the canned vegetables.
  2. Fry the onions in a little oil in a coated pan until translucent, then add the mushrooms and carrots and fry with them. Now mix in the ajvar. If it is too thick, add a little water. Mix in the kidney beans and continue to simmer. Mix in the cooked rice, then add the corn and mix everything together. Season with salt and Tabasco, stir and serve.
