Ingredients

  • 250 g rice noodles
  • 1 bunch coriander
  • 1 clove garlic
  • 2 chilli pepper (s)
  • 3 tablespoon peanuts, dried, see note
  • Peanut oil or sesame oil
  • Salt or soy sauce

Instructions

  1. Cook the rice noodles until done.
  2. In the meantime, roast the peanuts in a pan or wok until they get color. Clean and chop the coriander. A moulinette or similar device is best. Add the oil, the chilli peppers and the garlic. Then add the roasted peanuts and add salt or soy sauce to taste.
  3. Finally, put the pasta in a bowl and mix well with the pesto.
  4. Note: Dried peanuts are available in Asian shops, if necessary roasted peanuts can be used.
