Rice with Chicken, Broccoli and Cauliflower

Loose rice with chunks of chicken and vegetables is a simple homemade dish for your daily lunch or dinner. With two types of cabbage, broccoli, and cauliflower, the rice is original and delicious. The dish is quite dietary and at the same time satisfying.

Ingredients

  • Long grain rice (I have basmati) – 150 g
  • Chicken fillet – 260 g (1 pc.)
  • Broccoli – 80 g
  • Cauliflower – 80 g
  • Carrots – 100 g (1 pc.)
  • Onions – 100 g
  • Ground dried garlic – 0.5 teaspoon
  • Seasoning for chicken – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Water (boiling water) – 500 ml
  • Sunflower oil – 60 ml

Directions

  1. Cut the carrots and onions into small cubes.
  2. Disassemble broccoli and cauliflower into small inflorescences, rinse and dry.
  3. Cut the chicken fillet into small cubes.
  4. Heat the sunflower oil in a saucepan or heavy pot. Place the chicken, broccoli, cauliflower, onions, and carrots in a saucepan.
  5. Fry the chicken and vegetables, stirring occasionally, for about 5 minutes. Boil water in any way.
  6. Then add rice.
  7. Add salt, black pepper, dried garlic, and chicken seasoning.
  8. Continue to fry everything together for another 3 minutes.
  9. Then pour in boiling water.
  10. Cover the pot with a lid, bring the water to a boil, reduce heat, and simmer until the water is completely evaporated and the rice is cooked (about 25-30 minutes).
  11. Toss cooked rice with chicken and vegetables.
  12. Rice with chicken, broccoli, and cauliflower is ready. Serve hot.
