Rice with Pumpkin, in the Oven

A simple and delicious recipe for cooking rice – with pumpkin and in the oven. Fry the pumpkin quickly with onions, and then bake with rice. The rice turns out to be fragrant, with a pleasant pumpkin sweetness. Try this colorful dish.

Ingredients

  • Rice – 250 g
  • Pumpkin – 300 g
  • Onions – 80 g (1 pc.)
  • Garlic – 1-2 cloves
  • Ground paprika – 0.5 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – 30 ml (2 tablespoons)

Directions

  1. We prepare the necessary products. We turn on the oven to heat up to 180 degrees.
  2. Peel and wash the pumpkin and onion. Cut the onion into small cubes, the pumpkin into large ones.
  3. Heat 2 tablespoon in a frying pan. tablespoons of vegetable oil. We spread the pumpkin and onion, fry over medium heat for 3-4 minutes, stirring occasionally.
  4. Salt, pepper, add paprika and simmer over medium heat for a couple of minutes.
  5. Put the fried vegetables together with the oil in a baking dish (I have a 1.4 l baking dish)
  6. We wash the rice by changing the water several times until it remains transparent. We spread the rice in a mold and level it.
  7. Add the peeled garlic and fill it with warm water (350-400 ml). The rice should be completely covered with water. Pour in salt.
  8. We send the form with rice and pumpkin to an oven preheated to 180 degrees for 35-40 minutes. If the rice is not ready, and the water is completely absorbed, add a little hot water and cook for another 5-10 minutes.
  9. Serve cooked in the oven hot rice with pumpkin as an independent dish or as a side dish for meat.
