Ingredients

  • 1 duck (approx. 3 kg)
  • 1 bunch mugwort
  • 2 tablespoon salt
  • 1 liter boiling water
  • possibly apples

Instructions

  1. Wash and dab the duck ready to cook. Rub in plenty of salt inside and out. Put the mugwort in the duck, also add apples if necessary.
  2. Put the duck in the pan and pour the boiling water over it. Close the pan with the lid and let it simmer on the stove for about 1 hour. Then remove the lid and put the pan or roaster in the oven at approx. 150 ° C (convection). Scoop up and turn the duck every now and then.
  3. Leave in the oven for about 2 hours, only roast the duck on the grill until golden brown for the last half hour. In the meantime, thicken the sauce with cornstarch.
  4. This is how my grandma prepared the roast and I use this recipe to the delight of the family.
