Roast Fish with Potatoes and Tomatoes (in a Pot)

Dishes in a pot are valuable in that with minimal participation in the cooking process, you get a full-fledged tasty dish, which is much more beneficial than fried and boiled ones. Roast fish and potatoes are as easy as shelling pears – you need to cut the food and place it in a pot, and the oven will do the rest! )

Ingredients

  • Fillet of white fish (pike perch, cod, hake, pangasius) – 400 g
  • Potatoes – 600 g (6-7 pcs.)
  • Canned tomatoes in their own juice – 200 g
  • Green onions – 2 pcs.
  • Salt – 1 teaspoon
  • Dried Italian herbs – 1 teaspoon
  • Ground paprika – 0.5 teaspoon
  • Ground black pepper – 1/3 teaspoon (to taste)
  • Vegetable oil – 1 tbsp

Directions

  1. Peel and cut the potatoes into small pieces.
  2. Cut the fish into approximately the same pieces. Sprinkle the fish slices with 1/3 of the salt, black pepper, paprika, and Italian herbs. Stir.
  3. Pour vegetable oil into a pot. (You can cook as portions – in small pots, or for the whole company – in a ceramic saucepan with a lid.)
  4. Place half the potatoes in a pot, add half the remaining salt, black pepper, paprika, and Italian herbs.
  5. Place prepared fish pieces on potatoes.
  6. Place the second potato on the fish and sprinkle with the remaining spices and salt.
  7. Spread canned tomatoes on top and pour in the tomato juice from the jar. If the tomatoes are whole, cut them with a knife. If desired, you can add water, about 50-100 ml. I didn’t add additional water – tomato juice was enough.
  8. Cover the pot with a lid and place in the cold oven. Turn the heat on 180 degrees (let the pot heat up with the oven).
  9. Cook the fish and potatoes after heating the oven for about 40-50 minutes. After the time has passed, remove the lid from the pot and cook the roast for another 10 minutes.
  10. Roast fish with potatoes and tomatoes is ready! Finely chop the green onion and sprinkle over the potatoes.
  11. Serve hot. Juicy fish, soft potatoes, and fresh herbs go well with each other!
  12. Italian herbs and paprika give the dish a Mediterranean flavor. Tasty, simple, affordable.
