Ingredients

  • 2 kg roast turkey or roast pork
  • 250 g plum (s), dried
  • 500 ml malt beer
  • 0.5 ½ glass mustard, coarse, medium hot
  • 1 bunch soup greens, diced small
  • 1 large onion (s), finely diced
  • 2 cubes beef broth
  • 1 tablespoon honey
  • 2 bay leaves
  • a lot pepper, black
  • 500 ml water
  • Oil or clarified butter

Instructions

  1. Heat the oil in a roasting pan. Sear the meat on all sides, remove it. Put the soup greens and the onion cubes in the roasting pan and sauté briefly. Deglaze with the malt beer. Add all other ingredients. Braise in the oven at 200 ° C (180 ° C fan oven) for approx. 2 hours. Water the meat occasionally (2-3 times during the cooking time). Possibly season again to taste.
  2. The sauce already gets a light binding from the vegetables. If you want, you can also pass it or tie it off.
