Ingredients

  • 1 kg turkey leg (s)
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 2 large onions
  • 2 cloves garlic
  • 2 tablespoon honey
  • 2 tablespoon mustard
  • some salt and pepper
  • Sauce thickener
  • 500 ml water

Instructions

  1. Wash the leg and pat dry. Release the bone. Season with salt and pepper. Then rub inside with a little mustard. Cut the garlic into thin slices and distribute them inside the leg, place the rosemary and thyme in the leg, squeeze and put in the fridge overnight.
  2. Sear the leg with the onions in a roasting pan on both sides. Take out the leg, pour some honey over the onions and let it caramelize. Take the garlic and herbs out of the leg and place on the onions, then place the leg on the onion, put the lid on it and put it in the oven at 160 degrees for about 2 hours. Then take the leg out and rub mustard and honey for approx. 15 minutes at 220 degrees and fry until crispy. In the meantime, remove the twigs from the brew and mix with a hand blender, add the water and bring to the boil. Season to taste with salt and pepper, thicken a little with a sauce thickener.
