Ingredients

  • 350 g rocket
  • 1 ½ honeydew melon (s)
  • 4 ½ tablespoon balsamic vinegar, white
  • 3 tablespoon olive oil
  • 3 tablespoon syrup (mango syrup)
  • 1 ½ teaspoon lemon juice
  • 4 shallot (s)
  • salt and pepper

Instructions

  1. Wash the rocket and spin dry.
  2. Halve the whole melon and remove the core from all three halves. Cut out balls with a diameter of approx. 1 cm from the inside with a ball cutter or a teaspoon. Finely dice the shallots.
  3. Mix the marinade with vinegar, olive oil, mango syrup, lemon juice, salt and pepper.
  4. Turn the melon balls and shallots in the marinade and let them steep for 10 minutes. Just fold in the rocket just before serving.
