Ingredients

  • 500 g flour (wheat flour, at least type 550)
  • 1 cube yeast
  • 100 g rocket
  • 2 cloves garlic
  • 1 egg (s)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoon oil (olive oil)
  • 60 g pine nuts
  • Butter, for the mold
  • Milk, for brushing

Instructions

  1. Put the flour in a bowl and make a well. Crumble the yeast and dissolve it in 275 ml of lukewarm water. Pour into the well and mix with sugar and a little flour. Cover and let rise in a warm place for 15 minutes.
  2. Add the egg and salt and knead everything with your hands to form a smooth dough. Knead thoroughly for about 10 minutes, then cover and let rise in a warm place for another 1 1/2 hours.
  3. Clean, wash, drain and chop the rocket. Peel the garlic and chop it very finely. Mix with the oil and lightly salt.
  4. Knead the pine nuts into the dough, then roll it out into a 30 cm square. Spread the rocket mixture on top and roll up. Grease the loaf pan and place the rolling pin inside. Let rise for another 30 minutes.
  5. Preheat the oven to 225 °. Place an ovenproof bowl of water on the bottom of the oven. Brush the loaf of bread with milk and make several diagonal notches with a sharp, moistened knife. Bake in the oven for about 1 hour, removing the bowl of water after 20 minutes.
  6. Tip: Tastes great with antipasti, salads or soups.
