Ingredients

  • 250 g rocket
  • 5 tablespoon extra virgin olive oil
  • 4 tablespoon balsamic vinegar, good
  • Salt and pepper, black from the mill
  • 500 g cheese (halloumi)
  • 40 ml olive oil
  • 3 tablespoon oregano, dried
  • 3 tablespoon thyme, dried
  • 1 lemon (s), untreated, juice it
  • Black pepper from the mill
  • Balsamic vinegar (crema, to decorate)

Instructions

  1. Sort out the rocket, cut off the ends of the stems, wash, spin dry and place in a bowl.
  2. Mix the olive oil and balsamic vinegar together, season with salt and pepper and pour over the rocket salad. Turn the salad several times in the dressing and arrange on 4 plates.
  3. Cut the halloumi into slices about 1 cm thick. Heat half of the olive oil in a large grill pan and fry half of the cheese slices on both sides until crispy. Leave enough space between the individual panes so that they do not stick together.
  4. Season the cheese on both sides with oregano, thyme and pepper. Do the same with the rest of the olive oil and cheese.
  5. Decorate the plates with the crema di balsamic vinegar as you wish - the cream can and should be eaten with them! To serve, cover each salad plate with 2-3 slices of fried cheese, drizzle with lemon juice and serve immediately.
  6. Be sure to serve freshly baked ciabatta with it.
