Ingredients

  • 150 g rocket
  • 1 pomegranate
  • 100 g parmesan cheese
  • 30 g pine nuts

For the dressing:

  • 5 tablespoon olive oil
  • 3 tablespoon raspberry vinegar
  • 0.5 teaspoon ½ mustard
  • salt and pepper

Instructions

  1. Wash and drain the rocket. Remove the pomegranate seeds from the fruit. Roast the pine nuts in the pan without fat and coarsely grate the parmesan.
  2. Mix the olive oil, mustard and raspberry vinegar into a dressing and season with salt and pepper.
  3. Mix all ingredients and pour the dressing on top.
