Rocket Salad with Pomegranate, Pine Nuts and Parmesan

Ingredients

150 g rocket
1 pomegranate
100 g parmesan cheese
30 g pine nuts

For the dressing:

5 tablespoon olive oil
3 tablespoon raspberry vinegar
0.5 teaspoon ½ mustard
salt and pepper

Rocket Salad with Pomegranate, Pine Nuts and Parmesan

Instructions

Wash and drain the rocket. Remove the pomegranate seeds from the fruit. Roast the pine nuts in the pan without fat and coarsely grate the parmesan.
Mix the olive oil, mustard and raspberry vinegar into a dressing and season with salt and pepper.
Mix all ingredients and pour the dressing on top.
