Rolls of Chocolate Pancakes With Cottage Cheese and Fruits

Delicious and original chocolate pancakes with curd filling and fruit are tender and juicy.

Ingredients
For pancakes:
Flour – 100 g
Cocoa powder – 10 g
Large eggs – 2 pcs.
Milk – 150 ml
Sugar – 1-2 tbsp
Salt – a pinch
Vegetable oil – 10 ml + a little for lubrication *
For filling:
Cottage cheese – 300 g
Cream 33% – 70 ml
Vanilla sugar – 1 teaspoon
Sugar to taste
Lime or lemon juice – 1 teaspoon.
Orange – 1 pc.
Kiwi – 1 pc.
Banana – 1 pc.
Canned pineapples – 80 g (2 rings)
Mint – 5 leaves or to taste
Directions
Prepare the ingredients for the chocolate pancake rolls with cottage cheese and fruit. You can take any fruit to your taste, and in the summer you can also use fresh berries.
For the pancake dough, sift the flour and cocoa powder into a bowl.
Add a pinch of salt, 1-2 tbsp sugar and mix everything thoroughly with a whisk.
In another bowl, combine milk, 2 chicken eggs, and a spoonful of vegetable oil.
Whisk the ingredients lightly.
Combine both mixtures, gradually adding liquid ingredients to dry ingredients, stirring constantly with a whisk so that there are no lumps. The dough should be moderately thick and uniform. (If the dough is too thick, add some more milk). Let the pancake batter rest for 30 minutes.
Fry the pancakes from the rested dough. Before frying the first pancake, lightly grease the pan with a thin layer of oil. Pour a ladle of dough into a well-heated and greased frying pan, spread it over the surface, and fry on both sides until tender. By the way, you should not make pancakes too thin, as they may burst when folded.
Thus, prepare pancakes from the whole dough (I got 8 pieces with a diameter of about 20 cm).
For the curd filling, combine cottage cheese, heavy cream, sugar (whichever you taste) and vanilla sugar in a bowl.
Stir the ingredients with a spatula.
Also, prepare the fruit. Peel them and cut into cubes of the desired size.
Send the fruits to a bowl, add chopped mint to them (take the amount to taste), as well as lime juice (if the kiwi and orange are acidic enough, then you can exclude the lime juice). Stir.
Form rolls. Lay a layer of cling film on the work surface, and put the cooled pancake on top.
Put a portion of the curd filling on half of the pancake, lightly grease the free edge of the pancake with the filling (this is necessary to fix the edge).
Place the fruit mixture over the curd filling.
And, helping yourself with a film (if you wish, you can do without it), wrap the pancake in a tight (be careful not to crack) roll. The finished roll can also, if desired, be wrapped in a film like candy (it is not necessary to do it, the main thing is to roll it up more tightly). Thus, form all the rolls. Send the finished rolls to the refrigerator for 1 hour (it will be easier to cut them neatly).
Cut the pancakes into portions diagonally and can be served.
