Ingredients

  • 4 pork chop (s)
  • 40 g clarified butter
  • 3 cloves garlic
  • 1 sprig rosemary
  • 1 teaspoon paprika powder, noble sweet
  • 1 pinch paprika, hot pink
  • 1 teaspoon peppercorns
  • 3 allspice grains
  • 30 grams flour

Instructions

  1. Rinse the chops and pat dry. Then tap lightly. Pre heat the oven to 180 degrees celcius.
  2. Crush peppercorns and allspice grains in a mortar.
  3. Mix both types of paprika into the ground spices. Rub the chops with the spices. Sift the flour into a deep plate and flour the chops on both sides, this will give them a nice crust.
  4. Heat a grill pan with the clarified butter. Sear the chops on both sides. Gently rock the garlic and add with the rosemary. Put the grill pan in the oven and bake the chops for 20-30 minutes, depending on their thickness.
