Ingredients

  • 4 clove (s) garlic
  • 1 pork loin (s)
  • 4 sprigs rosemary
  • olive oil
  • salt
  • Pepper, white, freshly ground
  • 1 lemon (s), the grated zest it

Instructions

  1. Crush the garlic cloves. Mix a paste with pepper, grated lemon zest and salt. Rub it into the loin and let it steep for about an hour.
  2. Tie rosemary sprigs along the loin with kitchen thread. Sear them with a little olive oil in a heated pan or in a roasting pan and continue cooking on low heat for about 30 minutes. Remove and let rest on a wooden board for a few minutes. Remove the sprigs of rosemary and cut into slices.
  3. A Salsa d`agresto with fresh ciabatta or with ribbon noodles and green asparagus might be enough.
  4. Tip: I thought about it - this part should actually be really good for grilling. Maybe someone will try it out in front of me and give feedback.
