Ingredients

  • 500 g mushrooms
  • 200 ml orange juice, organic
  • 1 medium onion (s)
  • 2 cloves garlic)
  • Oil and butter
  • salt and pepper
  • 500 g lamb`s lettuce or 1 - 2 heads lettuce
  • 1 orange (s), organic
  • 200 g parmesan, in one piece
  • Balsamic vinegar
  • olive oil
  • Seasoning (s) to taste
  • sugar
  • honey

Instructions

  1. Clean and wash the salad normally, make a sour salad dressing from the finely chopped onion, balsamic vinegar, olive oil and garlic cloves. Season with salt and pepper and other spices to your own taste.
  2. Peel the orange carefully. Reduce the orange juice to about 1/3 to 1/4 of its amount.
  3. Quarter the mushrooms, fry them in butter with a little oil with salt and pepper, when they`re done, sprinkle a pinch of sugar and pour about 2-3 tablespoons of honey in the pan and stir, the mushrooms should caramelize slightly.
  4. Put the lettuce in the salad dressing, mix, then spread the mushrooms on the salad in heaps and pour the concentrated orange juice over them. Place thin orange slices on top. Finely slice plenty of parmesan and add to the salad.
  5. Goes very well with Italian dishes, but can also be a whole meal with bacon and white bread.
