We bring to your attention a recipe for a delicious vegetable salad with white fish. This dish will be the perfect light meal for your whole family.
Ingredients
White fish (tilapia fillet, etc.) – 200-250 g
Sweet red pepper – 0.5 pcs.
Sweet pepper yellow (or green) – 0.5 pcs.
Fresh cucumber (small) – 1 pc.
Red onion – 0.5 pcs.
Olive oil – 3-4 tbsp
Balsamic vinegar – 1 tbsp
Lemon juice – 1 tbsp
Dill – 2-3 branches
Fresh mint – 1-2 sprigs
Sea salt – 0.25 teaspoon
Ground black pepper – to taste
How to make a vegetable salad with white fish:
Directions
Check prepared tilapia fillets for pits, then rinse and dry underwater. Season with salt and pepper. Place in a baking dish with foil spread on the bottom. Sprinkle the fillets with oil and then place them in the preheated oven for 20 minutes. Set the temperature to 180 degrees.
Wash yellow and red bell peppers, cut into halves, remove seeds and core. Cut it into small cubes (no more than 1 cm).
Cut the washed cucumber into slices.
Peel the red onion. Cut half of it into thin half-rings. (If the onion is large, then divide it into one more section before chopping.)
Combine chopped vegetables in a salad bowl. Add clean, dry mint leaves to these.
Finely chop the dill.
In a bowl, combine olive oil, lemon juice, and balsamic vinegar. Add dill and stir. This is a salad dressing with fish.
Pour the dressing over the chopped vegetables, and leave some of it for the fish. Stir everything well, but gently.
First, put the salad of cucumbers, peppers, and onions on a plate.
Then on top of the vegetable salad, place the slices of the finished baked fish fillet. Pour the remaining flavorful dressing over the fish – and serve the white fish salad to the table.
