  • 2 onions)
  • 1 clove (s)
  • salt and pepper
  • 4 tablespoon olive oil
  • 2 tablespoon vinegar
  • 1 bunch parsley
  • 1 hard-boiled egg (s)

Instructions

  1. Soak the quail beans in cold water for three hours. Do not cook too long with an onion and the clove in salted water - they should still be firm when you bite in. Remove from the water, drain well and place in a salad bowl. Pour oil and vinegar over it, season with salt and pepper. Sprinkle with the second chopped onion and finely chopped parsley. Finally, pour the chopped egg over it.
  2. Variation: Replace the quail beans with white beans.
