Ingredients

  • 600 g salmon
  • 1 carrot (s)
  • 1 onion (s)
  • 1 leek
  • 1 celery root
  • 1 clove garlic
  • 4 egg yolks
  • salt and pepper
  • flour
  • 4 egg whites
  • possibly breadcrumbs if necessary

Instructions

  1. Wash the salmon, portion it and place it on a tray or in a baking dish.
  2. Peel or clean the carrot, onion, leek, celery and garlic and then put through a meat grinder. Now add the egg yolk. Add as much flour spoon-by-spoon as it is possible to make a mixture that can be sprayed. Season to taste with salt and pepper. Beat the egg whites lightly into the snow and fold into the mixture. If necessary, fold some breadcrumbs into the mixture to make it sprayable.
  3. Pour the mixture into a piping bag and sprinkle on the salmon.
  4. Put in the preheated oven at 180 ° C for approx. 15 minutes. Serve immediately.
