Ingredients

  • 600 g spinach leaves
  • 1 onion (s)
  • 400 g salmon fillet (s)
  • 1 tablespoon oil, cold-pressed sunflower oil
  • 1 tablespoon vegetable stock, (powder)
  • 4 tablespoon heavy cream
  • 100 g cheese, (butter cheese, 60% fat in dry matter)
  • Clove garlic, (1-2)
  • 1 teaspoon sea salt
  • Lemon juice, (2-3 tablespoon)

Instructions

  1. Preheat the oven to 200 ° C (top / bottom heat).
  2. Wash, blanch and cut the spinach into pieces (save 80 ml of the blanching water).
  3. Steam the chopped onions in oil until translucent, add the spinach and season with the vegetable stock. Add the cream and blanching water and squeeze the garlic.
  4. Drizzle the fish fillets with lemon juice and lightly salt.
  5. Put half of the spinach in a baking dish, place the fish fillets on top and cover with the remaining spinach.
  6. Cut the cheese into thin slices and place on top of the vegetables.
  7. Bake the gratin in the oven for 20-25 minutes.
