Ingredients
Smoked salmon – 200 g
Young lettuce leaves (baby salad) – 1 glass
Boiled shrimp – 1 glass
Avocado – 1 pc.
Orange – 1 pc.
Green onions – 2 pcs.
Wheat tortillas, small (or thin pita bread)
Vegetable oil *
For salad dressing:
Olive oil – 0.5 cups
Lemon juice – 0.25 cups
Lemon zest, grated – 0.5 teaspoon.
Brown sugar – 1 teaspoon
Salt, ground black pepper – to taste
Directions
Preheat oven to 180 degrees. Sprinkle 4 small wheat tortillas (or flat pieces of thin pita bread) lightly with vegetable oil.
Place them (greased side down) in medium cupcake tins. Place the foil ball inside.
Bake for 10-12 minutes until light golden brown. Remove the trays with baskets from the oven, remove the foil and cool the baskets in the trays.
For dressing, combine olive oil, lemon juice, lemon zest, brown sugar, salt and black pepper.
Remove the skin from the salmon and cut the fish into pieces. Peel the avocado and cut into wedges. Peel and cut the orange into wedges. Place the fish, lettuce, shrimp, avocado, orange wedges, chopped green onions in the baskets.
Drizzle with cooked dressing. Serve immediately. Bon Appetit!
