Ingredients

  • 12 scallop (s), cleaned
  • 6 slices Parma ham
  • 20 leaves sage
  • 3 tablespoon oil (olive oil)
  • 60 g butter
  • Lemon juice
  • pepper

Instructions

  1. Preheat the electric oven to 100 degrees. Rinse the scallops with cold water, pat dry, season with pepper, lemon juice and a little salt. Wash the sage leaves, pat dry. Cut the ham into 12 strips of the same size, cover each with 1 sage leaf and 1 scallop. Roll these into the ham, possibly pin each with 1 wooden skewer.
  2. Heat the oil in a pan. Fry the saltimbocca in it until golden all over. Place on a grid, put in the oven at 100 degrees. Pour the oil out of the pan, heat the butter in it. Briefly foam the remaining sage leaves in it, season with salt and pepper.
  3. Arrange the saltimbocca, pour the sage butter around it and serve.
