Instructions

  1. First cook the potatoes with the skin just barely done, but not too soft (about 15-20 minutes?). Then drain, quench and peel.
  2. But you can also use leftover small jacket potatoes the day before - so they don`t have to be freshly cooked. If you like the potatoes e.g., season with a little pepper.
  3. Then carefully cut into the potatoes, insert a sage leaf a little and fix the protruding part of the leaf with a slice of bacon each, so wrap the potato.
  4. But you can also save yourself the incision and simply place the sage leaf on the potato and fix it with the bacon wrapped around it.
  5. Up to this point, the potatoes can also be prepared perfectly - e.g., for guests or barbecues.
  6. If you want to be on the safe side, you can also secure the bacon with toothpicks - but it actually cooks together by itself, especially if you fry or grill the seam side first. With the toothpicks, however, they become great finger food.
  7. Pan:
  8. Fry the potatoes all around in a little hot oil, turning them. until they are lightly browned.
  9. Oven:
  10. It is best to bake / roast under the grill, or alternatively, with top / bottom heat (around 200 ° C), on a lightly oiled baking sheet, turning every now and then.
  11. Grill:
  12. Grill on a grill tray, also turning all around. Alternatively, you can put the potatoes on skewers and grill them - then turning them is easier, especially with larger quantities.
  13. The Saltimbocca potatoes taste very tasty with a herb or garlic dip (quark or yoghurt) or with a spicy tomato dip with a colorful salad or with oven-baked or grilled vegetables - but also with a grilled or roasted steak as a side dish.
  14. The recipe can also be easily extrapolated for many people and also great to prepare. At a barbecue party (where there are usually other things) we can easily get there with the 20 potatoes for 8 people.
