Sandwich with Omelette, Cheese, Ham and Pickled Cucumber

For a quick bite, a hearty omelet, ham, cheese, and pickle sandwich will come in handy. Preparing such a sandwich is very simple and perfect for a hearty breakfast or picnic.

Ingredients
Toast bread – 2 slices
Eggs – 2 pcs.
Ham – 4 slices
Toast cheese – 2 slices
Pickled cucumber – 1 pc. (40 g)
BBQ sauce (or ketchup) – 1 tbsp
Salt to taste
Ground black pepper – to taste
Vegetable oil (for frying) – 1 tbsp
Directions
Break the eggs into a deep bowl, add salt and pepper and mix well until smooth.
Grease a frying pan with vegetable oil and heat over medium heat. Pour the egg mixture and immediately place the slices of bread in it at a short distance from each other. Fry for about 2-3 minutes, until the egg mass has set completely.
Reduce heat to low and gently turn the omelet and bread over with a wide spatula or two spoons. Gently fold the protruding edges of the omelet over the bread slices.
Place 1 slice of cheese on one side.
Place 2 slices of ham on top of the cheese.
Brush the ham with barbecue sauce or ketchup.
Top the sauce with 2 more slices of ham.
Cut the cucumber lengthwise into 4-5 slices. Place an overlap on top of the ham.
Place the second slice of cheese on top of the cucumbers.
Use a spatula to pry up the free side of the omelet and place it over the filling. Press down lightly with a spatula or spoon.
Cover the pan with a lid. Cook over low heat for about 3-5 minutes, until golden brown. Then remove the lid, turn the sandwich over and fry it for about 2-3 minutes more.
Remove the finished omelet, cheese, ham, and pickled cucumber sandwich from the pan and cut into two diagonally. It is best to serve the sandwiches hot while the cheese is still fresh.
